Carrageenans are a family of polysaccharides which are extracted from the red edible sea foods. The other name of carrageenans or carrageenins, the name is derivated from the Irish language. These are mostly used in the food industries for different purposes. These are used for gelling and thickening of foods and for stabilizing. This has the property of become thicker. That’s why in many of the food products these are mostly used. It’s purely a vegetarian product which is used as the alternative of gelatine. To replace the gelatine it is used in most of the cases. These are large and flexible molecules and so has the ability to form the gels at the room temperature. When it is placed in the room temperature it turns in to gel as it is highly flexible in nature. These are first introduced in China. These are found in the roots of some plants.
